How does your fresh vs frozen system work?

We are a small farm that processes beef on scheduled butchery days. After processing, our beef hangs for a minimum of 21 days to mature and tenderize, ensuring exceptional quality. Fresh products are available for a limited window after this maturation period. Products not sold fresh are immediately frozen to lock in peak quality. We recommend selecting your delivery or collection date before shopping to ensure availability during your chosen window.

When should I place my order for fresh beef?

The best time to order fresh beef is in the run-up to a butchery date, as this is when fresh products will be available after the 21-day maturation period. If you miss the fresh window, don't worry - our frozen products maintain the same exceptional quality and are always available. Why do you hang beef for 21 days?

The 21-day hanging period is essential for developing the exceptional flavor and tenderness our beef is known for. During this time, natural enzymes break down muscle fibers, creating the perfect texture and allowing the rich, complex flavors to develop. This traditional aging process cannot be rushed and is what sets our beef apart from mass-produced alternatives.

How is the beef packaged?

Our beef is vacuum-packed to maintain freshness and delivered in insulated packaging with ice packs to keep it at the perfect temperature throughout its journey to you. We use sustainable Woolcool packaging made from sheep's wool for excellent insulation.

How are weights determined?

Every animal is unique — so product weights will vary. As a small farm working with individual animals rather than standardized production, we provide weight ranges that reflect natural variation. We always strive to keep our product descriptions and weights as accurate as possible.

How long will the beef keep?

Fresh vacuum-packed beef will keep in your refrigerator for up to 10 days. Frozen beef can be stored for up to 6 months. We recommend consuming fresh steaks within 5 days of delivery for the best flavor and texture. Frozen products should be thawed slowly in the refrigerator for best results.

Do you offer subscriptions?

We don't currently offer subscription services due to the nature of our small-batch, seasonal production schedule. However, you can sign up for our newsletter to be notified when fresh beef becomes available after each butchery session, ensuring you never miss a fresh ordering window.

What if I'm not home for delivery?

Our sustainable packaging will keep your beef chilled for up to 48 hours, so it's fine if you're out when it arrives. You can also specify a safe place for delivery or have it delivered to a neighbour. For collection, check our opening times on the delivery page.
